Green (Avocado) Deviled Eggs
Packed with protein and good-for-you fats, this healthy, simple snack comes together in minutes. Easy as 1-2-3!
6 omega-3 or pastured eggs, hard-boiled and peeled
1 ripe avocado, skin and seed removed
1 tablespoon Dijon mustard ( I substituted horseradish mustard)
1 teaspoon grated horseradish
1 teaspoon iodized sea salt
Juice of 1 lemon
Paprika, to garnish
1-cut eggs lengthwise and remove the yolks, placing them in a bowl.
2-Add avocado and the remaining ingredients (except the paprika) Smash with a fork or put into a food processor. Blend until smooth.
3-Fill each egg while half. Sprinkle with paprika. Yummmmm Enjoy
